berry yoghurt crumble

In the school holidays I am always trying to think of quick, yummy and healthy snacks that the kids can make for themselves. Now that my freezer is full of strawberries, this dish comes to mind. I don’t sweeten the yoghurt as I think the muesli and the syrup around the berries make it sweet enough.

Of course you could assemble it in a bowl and it would still taste great, but give them a glass and a pretty spoon and it will feel like dessert!

To serve 4:

200g fresh or frozen berries, such as raspberries, blueberries or strawberries
2 cups plain greek-style yoghurt
4 tsp caster sugar
4 tbsp lemon juice
½ cup good quality toasted muesli (better still, you can make your own)

Place the berries into a bowl and sprinkle over the lemon juice and the caster sugar. Allow to stand for about 10 minutes to draw the juices out of the berries. Stir gently then divide between four serving dishes or containers.

Carefully layer the yoghurt over the berries, dividing evenly.

Top the yoghurt with the muesli topping. Enjoy!
